Why is everyone all of a sudden so out on cooking with seed oils? The answer is long and complicated.

The consumption of vegetable oils are high in polyunsaturated fats, particularly linoleic acid, which experts suggest has contributed to rising rates of obesity, diabetes, and other health issues. While common to highlight the negative health effects of sugar, the tasteless canola oils (and its many relatives) seem innocuous. In so many words: “If it’s so bad for you, why doesn’t it taste great like sugar?”
